My husband’s birthday was this past weekend and I had to come up with something creative for the cake.  I knew I wanted to do cupcakes because they are easier and I wanted to use my cute cupcake wrappers and toppers.  The only problem is that his favorite is cheesecake.  I also knew that he likes red velvet cake and that is what spawned the idea for these little guys:

It may look like your typical red velvet cupcake with cream cheese icing, but no….
Don’t be mistaken! These are filled with cheesecake!

OMGeeee these are good and so easy!  Everyone loved them!

Here is how I did it:

1.  Prepare a Duncan Hines Moist Deluxe Red Velvet Cake Mix as directed on the box. Pour into cupcake lined muffin tin and bake until done.

2.  After they have cooled completely, use a piping bag and No. 230 Round Decorating Tip to pipe Philadelphia Ready-To-Eat Cheesecake Filling into the center of each cupcake.

3. Top with your favorite cream cheese frosting.  Enjoy!
